• Prepare Your Meat: Soak 500g of chicken (4-6 thighs), fish, prawns, or calamari in 1 cup of buttermilk with 1 tsp of salt for 20 minutes to overnight. If you don’t have buttermilk, mix 1 cup of milk with 1 tbsp of vinegar.
• Create the Coating: Combine 1.5 tbsp of Harry’s Spice Blend with 1/2 cup of flour and 1/2 cup of cornflour. This mixture ensures a crisp, golden-brown exterior that is both flavourful and crunchy.
